  • To prepare, cook and present all food required in a large catering  unit of the standard laid down by the company.
  • To ensure a high standard of production is maintained by controlling the activities of self and cooks. 
  • To maintain good standards of hygiene in the unit and personal hygiene
  • To assist with menus planning and costing 
  • To provide innovative menu ideas 
  • To order food necessary for chosen menu as required by the manager/ess or chef 
  • To accurately cost dishes for budgeting information  
  • To control production to eliminate waste 
  • To prepare salads and snacks as necessary 
  • To allocate work to junior kitchen staff 
  • To assist the manager/ess as necessary​
